- 1 lg head escarole
- 1 lb italian sausage (sliced 1/4"-1/2")
- 3 cloves garlic
- 1/8 c. olive oil
- salt & pepper
- grated parm. cheese
This is mom's (lynne m.) escarole & sausage over macaroni. Wash escarole and break into small pieces. Boil until tender (apx. 20 min). Set aside. 2. Fry sausage,salt, pepper, and garlic in oil. 3.
Add boiled escarole and serve over grilled macaroni. (Top with parm. cheese)...the macaroni grill recipe is ready to serve....delicious ! enjoy !
